Tiki Month here at the Lounge, a time of fantasy and frivolity to buffer us from those slings and arrows that give even the best people a bad time. And so we bring you another luscious libation, an elixir for grooving to the radio all night long. As Fagan and Becker say, “No static at all.”
FM
- 2 1/2 oz gold Barbados rum
- 3/4 oz white crème de cacao
- 2 oz grapefruit juice
- 1 oz lime juice
- 2 – 3 dashes grapefruit bitters
Shake with ice cubes and strain into a double old fashioned. Fresh ice to fill. Grapefruit twist.

ReplyDeleteI had to sub the white cacao with Trader Vic's dark cacao and the gold rum with a mix of light and dark (sorry). In the end, it was actually a bit tart for me... I had to add a dash of syrup.
Very interesting... the grapefruit dominates, with the cacao poking through, the combo giving an almost peppery note. The lime and rum, for me, disappeared, and this ended up being a battle between the grapefruit and cacao, but not in a bad way. Not my cup of tea, but very interesting.
Very glad you tried this. Yeah, it’s not especially rum-forward. And the lime is mostly there to help boost acidity, which varies widely with the grapefruit. The tiny grocery where I do most of my food shopping only stocks easygoing pink types (surely in the interest of space). But had I bought a white one in the first place, it might have ended up a completely different drink. ;-)
DeleteYes, my problem could have been that I used white grapefruit juice from one of the mini cans that I keep away in my "cocktail staples" drawer. I just realized that its tartness was reminiscent of the Fog Cutter.
DeleteYeah, my only qualm is that 2.5oz rum is a lot for a drink that's not rum forward... then again... I can stop complaining and just make half of one next time :)
Grapefruit and cocoa i a nice combination just like pineapple and coffee. I haven`t tried this drink but i don`t have any gold Barbados rum...but i wonder what would happen if you used a strong dark rum like Smith and Cross o a fullproof Caroni and white grapefruit...and those things i have..
